Embla is a wine and wood-fire restaurant in the Melbourne CBD that opened in 2015 and has maintained a position as one of Australia's most serious natural wine lists without the evangelism that natural wine culture often produces. The list is largely European — French and Italian with particular strength in the Loire, Piedmont, and Jura — alongside Australian producers from the Macedon Ranges and the Pyrenees given equal weight. The food is built around the open wood-fire grill and changes according to what is available from the Victorian farms and producers the kitchen works with. The room is a long, narrow former commercial space: warm, brown, and correctly proportioned for the kind of evening that extends past its original intention.
