La Résistance is a boulangerie in Cordón — the residential neighbourhood between the Rambla-facing Pocitos and the more urban Centro — operating on French production principles applied to Uruguayan materials. The baguettes are proofed and baked to French specification; the croissants are the test of a boulangerie's seriousness and they pass. The room is small, the production cycle is visible, and the hours are baker's hours: open early, closed by early afternoon when the day's production is done.
