Mandabatmaz is a tiny coffee stand on the steps of the Olivia Geçidi — a narrow passage off İstiklal Caddesi — that has been serving traditional Turkish coffee in the densely compacted Beyoğlu style since 1967. The name translates roughly as 'the buffalo does not sink', a reference to the coffee's thickness, which is prepared with an emphasis on foam and consistency that the owner's family has maintained across two generations. The space fits perhaps fifteen people standing; there are no seats. The coffee is ordered from the window and consumed on the passage steps with the particular quality of stillness that the narrow lanes of Beyoğlu retain even when İstiklal above is entirely overrun. The street above is one of the most visited thoroughfares in Istanbul; the passage below is not.
