The colonial building has been restored to a state of careful grandeur. Paccari occupies the courtyard of a heritage property in the historic centre — painted arches in mint green, a mezzanine balcony, a resident fig tree growing into the light shaft, and an outdoor heater standing in for sunlight on cool Andean evenings. The hot chocolate uses Ecuadorian cacao from the Amazon foothills. One of the most considered interiors in the city.
