Pavé is a pastry café in the 5 Vie district — the old medieval quarter between the Duomo and Sant'Ambrogio that design practices and independent food businesses have been settling into for the past decade. The brioche is the morning benchmark: made in-house, correctly laminated, served at the counter with a macchiato. The seating is limited; the rhythm is standing at the counter and moving on. Pavé operates a second location in the Porta Venezia neighbourhood, and a pasta shop on the same block — all three premises share the same logic of doing one thing correctly and refusing to expand the concept beyond its own integrity.
