Rongros occupies a heritage shophouse in the old city — a building whose walls have been allowed to remain in their current condition: exposed brick, layers of plaster at various stages of removal, the evidence of different decorative periods in one surface. Against this archaeology of building material, the dining room is composed with quiet precision: black tables, cut flowers in simple vessels, a gold-framed portrait of a former king that reads as household object rather than state image. The kitchen works in traditional Thai recipes drawn from old manuscripts and family sources, applied with the rigour of contemporary technique. The result is food that tastes specifically like Bangkok rather than like the generalised international idea of Thai cuisine.
