St. Ali opened in South Melbourne in 2005 and established the standard for what an Australian specialty coffee bar could be — a warehouse space with a roastery, an espresso bar programme built on sourcing and preparation rather than brand recognition, and a kitchen that understood the coffee context. The café did not invent the flat white but it refined the operating model around it: counter service, the barista as practitioner rather than server, and the expectation that coffee was worth waiting for. Almost two decades after opening, the operating logic has been replicated across Melbourne and exported internationally; St. Ali itself has moved through several evolutions of the concept.
