Wild Bakery takes a Pocitos townhouse and turns the ground floor into a production operation visible from the street — the fermentation schedule running the shop rather than the reverse. The loaves are long-fermented sourdoughs; the croissants are laminated in the French style; the counter moves between bread, pastry, and filter coffee with the efficiency of a place that has decided exactly what it is. The neighbourhood — residential, walkable, close to the Rambla — arrives on weekend mornings with the shopping bag logic. On weekday mornings before nine, the shop belongs to the production rhythm.
